Expansion and contraction of pipes as they heat and cool. Usually harmless, but if it is new, check the heat trap nipples and pipe straps.
Restricted flow through an inlet valve that is not fully open, or a failing temperature and pressure relief valve. A leaking T&P valve is a safety issue and should be replaced.
A sudden thud when a fixture shuts off. An expansion tank or water hammer arrestor cures it and protects the heater.
